Fruit and mint salad.

Dear followers,

This recipe is perfect for hot summer days, but I like to eat this salad anytime!

I made this salad a couple of times and I got so many positive messages. I started to experiment to make the recipe better. And you know what....The first recipe is still the best.

This salad is sweet, cold and fresh.
I use fresh strawberries and pomegranate. The blueberries are frozen, you can eat the salad when the berries are still a bit frozen, or you can let them defrost.
I eat the salad before that happens!

This recipe makes fruit salad for 4-6 people.

Preparation time: 20 minutes

Ingredients:
500 grams strawberries
1 large pomegranate
1 box of frozen blueberries (about 300 gras)
1 bunch of fresh mint
juice of 1/2 a lemon

Put the blueberries in to a large salad bowl.

Wash the strawberries and take of the greens. Cut them in quarters and add to the blueberries.
Juice the lemon on top of the fruit.

Cut the top and bottom of the pomegranate. Cut the skin of the pomegranate in to quarters, but not all the way trough the fruit!
Break the fruit open with your fingers and get all the small berries out.
Add to the salad.

Wash the mint and pull all the leafs of. Put the leafs in a small bowl and finely cut with a pair of scissors. Add to the salad.

Use a spoon and carefully mix the salad. I mix the salad when all the ingredients are in, because otherwise you will mash the fruit to much.
Serve immediately or put in the fridge until used.

You can add the blueberries at the end, just before serving. This will give an ice cream effect.
