This soup is very nice as a light lunch or as a snack.
This recipe makes one litre of soup.
Preparation time: 10-15 minutes
Cooking time: 20 minutes
Kitchen equipment: immersion blender
2 large onions
2 cloves of garlic
1 litre stock ( I use chicken stock, I buy at the butcher)
1 tablespoon olive oil
3 table spoons of milk
1 teaspoon thyme
peper and salt
walnut oil for garnish
Put the olive oil in a large cooking pot and heat slowly.
Peal and chop the onions and garlic roughly, fry in the olive oil.
Wash the courgettes and chop roughly, add.
Peal the potato and chop finely, add.
Add the thyme and fry for 5 minutes.
Add the stock and bring to boil.
Cook for 20 minutes on a low heat.
Take the soup of the heat and add the milk.
Blend with the immersion blender.
Taste and bring to taste with some pepper and salt.
Serve the soup and drizzle with some walnut oil.
