Apple walnut salad.

This salad is one of my favourites!
It is crunchy, fresh and creamy with a little sweet hint to it.

This is the perfect pick-nick salad, although the weather is not really nice at the moment.
The preparation of the recipe is quite fast. This salad is perfect if you like eating healthy and fresh, but you have not much time!

apple walnut salad

This recipe makes salad for 2 persons or 4 small side dishes.

Preparation time: 15 minutes

1 apple
1/2 cucumber
2 hands of walnuts
1 bunch of parsley
1 head romaine lettuce
3 tablespoons yoghurt (skinny or full fat)
1 tablespoon mayonnaise
1 teaspoon mustard
1 tablespoon lemonjuice
salt and freshly ground black pepper

The best way to start is with the dressing. I make the dressing in the salad bowl. 
Mix the yoghurt, mayonnaise, mustard and the lemon juice until mixed well. Taste and add some salt and pepper to your own taste.
Wash the parsley and chop roughly, you can also use the stems.
Mix the parsley in with the dressing.
Wash the lettuce and slice in to thin strips. Add to the bowl.
Wash the apple and the cucumber. Cut out the apple core and chop the apple, without peeling, in to small cubes. Do the same for the cucumber.
Add the apple and cucumber to the salad.

Chop the walnuts roughly and add tot the salad. Mix well and you are ready to go!
